Yummy Homemade Salad Dressing

Eating for two is a challenge for me somedays, and often, my creativity is lacking.  This results in day-after-day of turkey sandwiches and apples and that gets old FAST.  So today I dug back into my creative-thinking memory hard drive and remembered my favorite recipe for a vingarette salad dressing that is AMAZING.  It started as an obsessive quest to discover the secret recipe for the fattoush salad dressing made by one of my very favorite delis in Wichita (Le Monde).  It's not exact, but it comes pretty dang close and, in my opinion, it's even better.  It's a great compliment to grilled chicken or pork!

I decided in advance to share it with you, so I took some pictures as I went along.  My thanks (and almost apology!) go out to my friend Carol, crafty & culinary extraordinaire, and her super-awesome blog for inspiring the format for this post.  Her recipes (and her crafts) are really amazing, and when you have a moment, you really should check out the John and Carol Show.  So here goes:  the best salad dressing you'll ever make.

Here's what you'll need:


1/8 cup Extra Virgin Olive Oil (double if you are serving a big salad for a crowd)
1/8 cup Lemon Juice  (same as above)
1/8 cup white balsamic vinegar (can be modified to taste)
1/4 tsp. black pepper
1/4 tsp. salt
1 tsp dried basil
1 tsp dried oregano

First, measure your EVOO, lemon juice & vinegar into a small bowl to medium sized bowl.  It needs to be big enough to accomodate your lettuce later on, so that you can toss it in the dressing.  I like to use a bowl that has a pour spout on the side for easier (and less messy) serving.  A large pyrex measuring jug would suffice if you don't have a bowl like mine.

This is what it will look like...sort of like a science experiment with all the liquids separated.


Next, add your dry ingredients.


Finally, stir it up with a fork.  This amount of dressing is good for your lunch salad, with a little leftover, or perhaps your side salad for a dinner-for-two.



Important step:  take a taste test!  For a more tangy dressing, you can add a little more vinegar & salt.  If you want it sweeter, add a splash more lemon juice.

I prefer to toss my lettuce directly into the dressing, and then scoop it out into a serving bowl.  That way you don't end up with a bowlful of dressing at the bottom of your salad, which would be quite soggy by the time you are finished eating!


Speaking of soggy lettuce, if you don't have a lettuce keeper, I advise investing in one!  Mine was about $15 at Bed Bath & Beyond.  When you bring your salad bag home from the store, unload its contents into this puppy, open the vent, put the lid on, and your lettuce will keep up to 2 weeks.


As a bonus feature:  here's my favorite salad for serving (and enjoying!) this dressing.

Baby Spinach and/or Romaine lettuce
Tomato & Basil feta cheese (Athenos is yummy but pricey. A store brand can work just fine, but the leftover will dry out faster)
Grape Tomatoes
Dill pickle relish (optional!  I'm pregnant, so I love pickles on anything. But try it...it's delish!)
Sprinkle of Italian cheese blend or Mozzarella cheese



There you go!  Yummy salad dressing that takes less than 5 minutes to make and is a great lunch-time treat!

I Love Lucy!

 Chris & I brought home a new baby today…of the furry persuasion!  Lucy is an 8 wk old female Shih Tzu and what a fluffy little cuddle bug!!  She has the cutest little button nose & wags her tail so hard she squeaks!  Her birthday was 3/14/11 – the day I found out about Mini Miller…it was meant to be!!

Chris didn’t want a puppy yet (I have been BEGGING and he keeps saying “When the baby is 2 or 3 years old!” WHAT?!!)  I called him as he got home from work & told him to keep his shirt on and to get in the car as soon as he heard me pull up, and not to ask any questions!  I only had 30 minutes to get him back to the pet shop to look at her.  So I took him to see her, put Lucy in his arms, and it was love. 

I think they're going to get along just fine!

She is such a perfect little addition to our family (even Boots, the cat, has taken a shine to her…no one can resist such cuteness!).  Sooo glad we got our cutie pie NOW while I have the time to enjoy her being a puppy before baby comes along.

13 week Mini Miller update!

We had our second OB appointment today.  It went sooo well!  Not as involved as the first one, but exciting nonetheless.  We heard that sweet heartbeat (a healthy 150 bpm) and got to ask the doctor a bunch of questions...and she FINALLY gave me an Rx to try to kill the heartburn.  (Tums, Prilosec, and Zantac are not even touching it!). I am glad to know that I am 13w4d instead of the 12w5d that I thought I was.  I feel like we just fast-forwarded a week!  That means 2nd trimester starts MONDAY!!!  WOOT!!!

Oh, and the BIG question gets answered on June 17!!  We've already got the ultrasound on the calendar! :)

We also got to take a private tour of the labor & delivery unit & the women's unit on the hospital floor.  Lisa, our guide, is the childbirth educator at the hospital and was SOOO informative.  She explained everything so thoroughly, from the hospital's procedures and traditions, to what we can expect during labor & delivery and beyond, and kept inviting me to ask questions.  She was great!  I have to admit, I really didn't know what to expect.  I was kinda thinking a tour would sound like "Well, this is where you'll have the baby & this is where you'll stay after you have the baby, end of tour."  I just moved from Wichita, which boasts three first-class birth centers, to NoWhere, USA. I feel SO MUCH better after having seen where I will deliver and being assured that my baby will receive the best care available.

My mother-in-law is the HR hiring person at the hospital, so she was the angel who arranged for our private tour.  (Normally these are group tours offered during a childbirth class at the hospital).   Since Terri knows all the doctors & nurses in L&D (and is obviously VERY well liked!), she seems an obvious choice to me to have in the delivery room with Chris & I, especially since my family isn't local & my mom won't be here for the birth.  The look on Terri's face when I mentioned that I wanted her there was priceless.  This will be her first grandbaby, and that grin lasted a long time!

Here goes...life

Over the last several weeks of sheer boredom, I have thought multiple times of my empty little blog, and that I really had no excuse not to be posting.  After all, the top excuse for lack of blogging is "I don't have time!"  Well, in my life, I have nothing but time these days!  But everytime I sit down, I feel like I should be starting at the beginning of the story and trying to remember all the details since we moved.  That's a month's worth of blogging!  So I'm just going to jump right into the middle and pick up where I never left off...

Here goes life!

We've been in Camden, Arkansas just a few days shy of a month.  Hard to believe it's been that long, and at the same time, it feels like I have been here for much, much longer.  It's been an adjustment, to say the least.  There is a vast world between my hometown in Wichita and our current location in Podunk, USA.  Wichita is home to nearly 400,000 people.  About 13,000 people call Camden home.  It is a little, bitty town on the Ouachita river in south-central Arkansas. The town is pretty self-sustained as far as the essentials.  However, there isn't much more to write home about.  Movie theaters, restaurant chains & department stores are luxuries left to the outside world. 

It's not all bad.  Where the town lacks for commercial development, it abounds in tall green trees that force you to crane your neck back and shield your eyes from the sun in order to see the top.  Behind our house is one such grove of trees, so that when I look out my kitchen window, I look out into God's garden.  Wildlife is abundant, especially here on top of our little hill where our only other neighbor is the elderly pastor who lives in the parsonage behind the teeny tiny country Methodist church on the adjoining property. Looking out from our front porch, we see the parsonage, the church, and a big empty green pasture.  In my four weeks of unemployment, I have been blessed enough to see deer (with babies!), racoons, a badger, a red fox, and a variety of birds (my favorite of which are the cardinals who have their nest in a tree behind the house and come to visit me almost every day by landing on my kitchen window sill). We also have a family of wrens living in a nest in an out-of-commission mailbox on the front door.  Momma comes and goes at random, while her four young residents lie in wait for her to return with dinner.

Chris is loving his new job at Lockheed Martin and is quickly adjusting to the new pace of life.  He is up at 4:30am every day and out the door by 5:30 to be at work by 6am.  A very long 12 hr day later (for both of us!), he usually stumbles back through the door at about 5:30pm.  His work schedule is Mon-Thurs, 6-4:30, but of course my responsible super hero refuses to leave the plant with everybody else and stays behind at his desk to complete his to-do list that has been interrupted all day by the various needs of the production team that work under him.  Today is Friday, and he is once again hard at it, because several of those same production people milk the allowed overtime for all it's worth.  Chris says the company is catching on and making some changes, so hopefully the Fridays will come to an end soon.  Overtime pay is nice, but not at the cost of going in at FIVE AM.  I think it does something to both of us, mentally, to hear his alarm clock start going off before 3:30am. 

I am also adjusting to my new pace of life.  When I graduated from college exactly two years ago, I had been in school full time and working three jobs to support myself and my education.  That whittled down to two jobs, and then one full-time job, and finally, now that we are here, no job.  This girl is used to being busy and active and useful.  I'm used to being social and productive.  Now the highlight of my day is my daily sojourn to the local coffee shop for lunch.  There, I have made a few friends between the employees and a couple of other regulars, but apparently I am not good enough friends with the manager yet to talk her into a job!  My only serious job lead has been two interviews with a bank, which looked really promising and resulted in a big fat "No, maybe this summer sometime."  It has been a big, BIG change for me and hard to get used to.  I'm still not used to it.  But I am starting to get used to the idea that maybe God has something different for me than corporate America.

You see, God knows that I want to stay home with my baby.  I want to be the mom who has time to raise her kids and gets to watch and experience all those "firsts."  The thing I dread most about motherhood is the thought of handing my three-month-old infant over to a daycare center when I go back to work.  I don't feel good about talking someone into hiring me, only to quit in 6 months because I want to stay home with the baby.  I have been so fearing that firey re-entry into the atmosphere of Corporate America that is so hardened toward anything except building the almighty dollar.  I do not want to be in a position where I am forced to make my company my number one priority in life, to the exclusion of all else.  This is not a good time for that.  My God and my family comes before anything else. 

So, God is leading me to consider other possibilities.  Before I started planning a wedding, I was planning a fiction manuscript - a project that has been on pause for the most part of a year.  I have decided to take up writing again and continue working on that story, which has been constantly evolving in my brain despite the lack of opportunity to put pen to paper.  He is also leading me toward a home business that I was introduced to around Christmas, and which has been knawing on a corner of my brain ever since.  After being burned a few too many times by network marketing schemes, I have been pretty resistant to the idea of starting another one, even though I fell in love with this product long ago.  He has slowly been showing me and convincing me that this is an opportunity that fits me & my goals perfectly.  So, I took a deep breath last night and signed up.  There is a waiting list until July, so I won't be giving the grand unveiling of my new business until I know for sure when it is going to happen.  But watch this space, because it's gonna be good!

Well, hopefully my hubby is coming home soon, so I think I'd better go do something productive before he gets here!
